Sourdough loaves, flaky croissants, and single-origin coffee — crafted from scratch every morning at 401 Brew Street.
Since 2019
Downtown SD
At 401 Brew Street, we believe the best bread starts long before the sun rises. Our bakers arrive at 4 every morning to hand-stretch, fold, and ferment each loaf using our 4-year-old sourdough starter and stone-ground organic flour.
What began as a weekend pop-up at the San Diego farmers market has grown into a neighborhood destination — a place where the smell of fresh croissants pulls people off B Street, and every cup of coffee is pulled to order.

From Scratch
No shortcuts. No frozen dough. Just time, technique, and ingredients we trust.
Flour and water rest together for an hour — developing gluten structure before anything else touches the dough.
Our 4-year-old starter is folded in at 4 AM. The dough rests, folds, and ferments for 24–48 hours at cool room temperature.
Each loaf is hand-shaped, scored, and proofed in banneton baskets — never rushed, never pressed into molds.
Deck ovens at 480°F. Steam injected. Baked until the crust sings. Warm bread hits the counter by 7 AM.
